Sorry for the late reply. You can create your own server without Studio Prime, Studio prime allows to integrate into other softwares. And allows you to better manage your projects and sessions company wide

I think it can only be a single choice not two, but you can have it work for all subjects by leaving it blank.

Vince another idea is to create an MSI package for your team, which you can customize for it to auto install as default PDF viewer.
